Summer Peach Cobbler/Crumble Recipe

I adapted this from a recipe I found on Food52.com, one of my favourite food blogs. You can find the original at: http://food52.com/recipes/22959-southern-peach-crumble, but this adaptation is delicious. You can serve it with ice cream or whipped cream if you like, but we had it just on its own and it was just peachy!

Topping:

  • 1/4 Cup chopped Almonds
  • 1/4 Cup chopped Walnuts
  • 1/4 Cup Rolled Oats
  • 1 Cup Flour
  • 3/4 Cup Brown Sugar
  • 1 tsp Cinnamon
  • 1 Stick of Butter – cut into pea sized pieces

Filling:

  • 7 Peaches pitted and sliced (depending on the size – mine we a small-medium size)
  • 1 tsp Vanilla
  • 1 Tbps Whiskey (the one I used was infused with Rosemary, but Bourbon would also work)
  • Juice from 1 Lemon
  • 2 Tbsp Maple Syrup

Instructions: Preheat oven to 350. Mix topping ingredients in a bowl; mix all filling ingredients in another bowl. Pour filling into a baking dish and cover evenly with topping mixture. Place on middle rack and cook for 30mins.

** I found that the topping didn’t brown as much as I like, so I put the oven to broil for 2 mins right at the end. Don’t forget to let it sit for a couple of minutes when you take it from the oven to let it settle and cool.

  1. Yum! Just wondering how the topping isn’t really dry without any butter?

    1. Thank you. You are totally right, I completely forgot to add in the butter. I have no modified the recipe to include the butter. Enjoy!
